Kiwifruit Sunrise

A brilliant red colouring radiates from the centre of an otherwise yellow-fleshed kiwifruit. The colouring, generated by high concentrations of the natural antioxidant anthocyanin, adds visual appeal and an enhanced health promise for consumers.

Plant & Food Research is exploring how the colours found in the fruits and vegetables we eat influence their nutritional benefits, and how new cultivars can be bred with these natural colours to ensure healthy fruit and vegetable options remain an exciting part of a healthy diet.
