Characterising the New Zealand ecosystem
Research by The University of Auckland, in association with Plant & Food Research, has collected and characterised more than 200 strains of yeasts found in New Zealand vineyards. Different strains were found in the soil and on the fruit in different region, and each may have a different effect on the characteristics of the wine produced. These populations of yeasts are likely one factor influencing the flavour characteristics of wine from individual vineyards or specific regions.
