Pacific Oyster

The Pacific Oyster, Crassostrea gigas, is native to the Pacific coast of Asia, but is now grown in North America, Australia, Europe and New Zealand.

In New Zealand, the Pacific Oyster grows to up to 18cm long and has an off-white shell with bands of yellow, brown or purple. Pacific Oysters are primarily found in the North Island, and most of the harvest occurs between April and December.
